「慢食」的理念,目的是對抗日益盛行的快餐與過於快速的生活方式。近年來台灣因為食安風暴不斷,民眾也逐漸重視日常生活中的飲食來源。本研究在歐美已行之有年旨在探討台灣慢食運動發展現況並建構台灣民眾的慢食意識與慢食行為量表以供後續研究,透過文獻探討與專家討論,本研究以問卷調查的方式進行,回收有效問卷302份,並透過統計方法及典型相關進行資料分析。 研究發現台灣民眾的慢食意識方興未艾,其而慢食意識量表可以「好」、「乾淨」及「公平」等構面衡量,慢食行為量表則可分為「說服行動」、「消費主義」、「政治行動」等三類且以消費主義為最強烈。 "Slow Food" concept, the aim is to fight the growing popularity of fast food and too fast lifestyle.
