    Abstract:   銀耳為著名之食藥兼用菇菌,歷代醫學都認為銀耳有強精、補腎、潤肺、生津、止咳、潤腸、養胃、益氣、美容、健身之功效。傳統上銀耳大都以棉籽殼為介質進行栽培,然而由於棉籽殼在使用上往往有人體健康風險之疑慮,因此替代性栽培介質之開發乃有其必要性。  本研究以台灣現有兩家銀耳栽培公司:偉裕生技股份有限公司及隆谷養菇場之銀耳生產系統,包括傳統之棉籽殼生產方式及以木屑培養方式,探討不同生產管理方式下,適合銀耳生長之溫度、濕度、光照、空氣等環境因子對銀耳生長之影響,並比較以木屑及棉籽殼為栽培介質的生產管理方式對於銀耳生長表現及成份之差異。此外研究中亦進行兩種生產方式之優劣項目分析與成本比較,並探討以木屑生產銀耳過程中防止雜菌感染之方法。研究結果顯示,利用本研究中建立之生產流程及栽培管理方式,可成功使用木屑為介質進行銀耳之栽培,且在生長表現、成分及成本方面,皆與傳統之棉籽殼栽培結果相仿。本研究除建構以木屑進行中溫銀耳培養之最佳生產流程與管理方式外,亦為銀耳栽培提供了低污染且符合環境永續之介質。
      Tremella is a food with medical effect which includes about tonifying kidney, nourishing lungs, relieving cough, nourishing stomach, cosmetology and fitness.  This study is based on two companies in Taiwan (Mushroom Biotechnology Co., Ltd., Long and Guyang Mushroom Farm). One of the cultivation is through wood dust, and the other is through cottonseed shell. Both get the product certification from Tse-Xin Organic Certification Corporation. This study is to understand how humidity, light, air, and the production management of these substance influence the production of tremella. This research will analyze the pros and cons of the production of tremella through wood dust and cottonseed shell and the bacterial infection prevention methods during the edible fungus production process. The goal of this study is to strive for the optimal solution for the production.
